Chickens, eggs and the Quegg McMuffin

We have 3 female quails (and a male) now and get 3 quails eggs a day pretty reliably. We have 8(ish) chickens and are lucky to get two eggs a day. 
So we have to have more ways to use quails eggs.
Omlet is good as is boiled and peeled with a little salt. I use them in cakes sometimes. We have found fried a bit tricky though as they are so small it is hard to keep the yolk from setting as you cook the white. I had an idea though of making them in to an egg muffin where many could get put tegether, and you want the yolk cooked anyway.


We have one chicken who is broody and living in a small hutch on her own as she kept putting the others off laying in the house. She has been at it for months and keeps breaking the eggs. She has only 1 at the moment having broken the others. It must be due to hatch any moment - assuming it is growing.


The chicks that hatched in April are getting quite big - they are living in a cage too as previous batches kept escaping through the electric mesh and last years were got by a fox. Once they are big enough not to slip through the mesh they can br set free.

The ginger chicken in the cage next door has a broken wing where the dog caught hold of her. She seems fine unless she spreads her wings, we are hoping it will heal if she gets a bit of peace and quiet. It may end up a bit squint, but she doesn't need to fly anywhere anyway. It is her two sisters who are laying the 2 eggs a day at the moment.
