Naan Recipe

I can never really settle on a recipe as results vary, I think more due to the cooking technique than the dough recipe. Generally a wetter dough is better I think…

 270g plain flour

120g warm water

2tsp dried yeast

110g yoghurt (kefir)

3 tbsp soft butter

1 tsp sugar (or some honey)

Salt


Some butter (to brush with when cooked)


Knead everything together.

Rise for an hour or until doubled in size

Divide in to 8 pieces and form into balls


Rest the balls for a few minutes and then roll each one out till maybe 15cm in diameter.

Cook in pizza oven (or on a hot skillet - butter it a bit first)

TGI Friday!

 Sangria and popcorn to celebrate.

We have had very mixed weather through all of July and August. Rain and cold with some hot humid days thrown in. We have even had to burn the fire for shower water once! Unheard of in the summer.

Pizza!

To celebrate the honey and the milk from Venus I invented a cocktail. It’s inspired by the white russian and is equal amounts of cream and really strong coffee (with some honey mixed in to it while warm and then chilled). Then some pale rum to taste.

The pizza from the roccbox is fantastic now I have got the hang of it!

Pizza evening

Finally got the hang of the Roccbox enough to have people round for pizza.

 Starter of garlic bread and lamb chop cooked in the Roccbox - with creme fraise and mint

First outing of the roccbox

The weather has been quite variable, but we took an opportunity to fire up the roccbox pizza oven for the first time this year. I had forgotten some tricks so the pizza was a bit smushed but basically ok and v tasty.

Roccbox Pizza

We got this pizza oven over a year ago and haven't used it much having failed to master its cooking techniques. I finally got round to setting about conquering it as the reviews are so great it had to be a personal failure.
There were three issues
1.) The flame didn't seem as big as it should
2.) Half the pizza was frazzled and the other
3.) Getting the pizza off the slice into the oven often resulted in the pizza still on the slice and the toppings in the oven or the pizza in a crumbled heap.

We have changed the gas (which as an almighty kerfuffle getting the right gas and connectors - of course not standard between uk and france), I have perfected some stretch dough and we used A LOT of flour to ensure a successful launch in to the oven. I also turned the pizza as it was cooking.

We have now had several successful and very yummy pizzas

Neither dog nor Doug were super impressed about the time of year I chose for this outdoor pizza cooking rush of enthusiasm

As well as the gas attachment there is a little wood burner. Doug cut some tiny tiny logs for it. It worked quite well though the gas is more effective and easier.

I also tried cooking a small chicken. Came out well though I should have cooked a little less hot and longer. Not as impressive as the pizza.
