Christmas cake done!

Slightly worried I didn’t cook it quite enough, but I prefer a bit stodgy in the middle to too dry…

Happy Valentine’s Day

We are not big on Valentine’s day, but marked the occasion with a nice homegrown meal. Monday so stayed off the wine :)

Chicken breast with orange (didn’t grow the orange juice), chips and kale. With some nice homemade mayonnaise.

Naan Recipe

I can never really settle on a recipe as results vary, I think more due to the cooking technique than the dough recipe. Generally a wetter dough is better I think…

 270g plain flour

120g warm water

2tsp dried yeast

110g yoghurt (kefir)

3 tbsp soft butter

1 tsp sugar (or some honey)

Salt

Some butter (to brush with when cooked)

Knead everything together.

Rise for an hour or until doubled in size

Divide in to 8 pieces and form into balls

Rest the balls for a few minutes and then roll each one out till maybe 15cm in diameter.

Cook in pizza oven (or on a hot skillet - butter it a bit first)

Curry Cooking Day

A friend spent some of her childhood in India and is a super cook of Indian food.

In aid of the twinning association (Bagneres is twinned with Inverurie and Malvern) we helped cooking for a curry take away evening.

Curry cooked for nearly 50 people. 15 different dishes (including salads and desert). Hectic at times, but fun and very delicious food.

Lettuce in risotto??

I read a recipe with lettuce in stir fry, tried it and it was great. Then I had the idea to try it in risotto to! Also good!

Served with steak

We are on a new year diet, so quite a few meals with lettuce :)

Pizza!

To celebrate the honey and the milk from Venus I invented a cocktail. It’s inspired by the white russian and is equal amounts of cream and really strong coffee (with some honey mixed in to it while warm and then chilled). Then some pale rum to taste.

The pizza from the roccbox is fantastic now I have got the hang of it!

Haggis!

I failed to make it in time for Burns Night, but better late than never I say!

We didn’t have neeps, but mashed butternut squash is very good

Leftovers fried for breakfast. Even better!

Happy New Year!

Wild boar with butternut squash and kale (also with Champagne) for Hogmanay.

Little walk and a ski on New Years Day

Wishing you all a Happy New Year. Hopefully this one won’t be as eventful as 2020

All home grown meal

Well, not the yoghurt or the garlic, oil, salt pepper etc...

Roast lamb with moroccan inspired potato and chive fritters, garlic roast runner beans and mint yoghurt.
It is not super attractive looking, but very tasty, perhaps I should have sprinkled some chives to brighten it up.

Mini lamb leg. Perfect for 2 people with a bit of leftovers..l

I might try this as a potato salad next time. It is left over boiled potato with chives, olive oil and some tagine spice. For frying it I added an egg to stick it together but wouldn’t do this for salad obviously (althoguh it would be nice with boiled egg!)

Fried then the top grilled.

Home grown and not

Despite the potager being engulfed in grass and weeks we have had

Beef thai red curry (plenty of courgettes!)

Bibimbap with more courgette, kale, sugar snap peas and bean sprouts (didn’t grow the beans I sprouted)

Home grown dried meat. Didn’t grow the melon.

Pancetta, coppa and reestit mutton

Mussels, also with courgette

Home grown basil on saucisson and mozzarella pizza (didn’t make the mozzarella)

Marmalade

There was nearly a marmalade CRISIS this year when the place I normally get them from had run out by the time I waited until we were back from skiing. Fortunately someone else sourced some and the day was saved.

Sanglier Stew

This was made from some of the sanglier. Also v yummy

I cut in to chunks which I tossed in flour and salt. Then fried them quite hot in some oil, when it was nice and brown but not cooked through I added the onion and cooked it a little. I then added wine to nearly cover the meat and cooked for around 3 hours. For the last 30 minutes I added some pepper, carrot and mushrooms.
