Ginger Biscuit Recipe

50g golden syrup
50g soft brown sugar
50g butter
100g plain flour
1/2 tsp baking powder
1 tsp ginger (or more or less depending how gingery you like it

For a softer biscuit add an egg yolk
50g golden syrup
50g butter
50g light soft brown sugar
1 egg yolk
150g plain flour
1/2 tsp baking powder
1 tsp ground ginger (or to taste)

or use a whole egg
100g golden syrup
100g butter
100g light soft brown sugar
1 egg
300g plain flour
1 tsp baking powder
2 tsp ground ginger (or to taste)

Melt syrup, butter and sugar
Let the mixture cool a bit
Add the other ingredients and mix
Make approx walnut size pieces on a baking sheet. The cookies will flatten out as they cook.
Cook in a preheated oven at 170°C for about 10 minutes until golden brown. A lower cooking temp will also give chewy-er biscuits. They are quite easy to over cook...
When you take them out the oven they will be quite soft and they will harden as they cool, so you need to experiment a bit till you get them exactly as you like them. I always forget when I haven't made them for a long time.
