Homemade tonic water recipe

210 ml water
Zest of one lemon
Zest of one orange
Zest of one lime
2 cardamom pods
10g citric acid 
7g angelica root (optional)
1 stalk of lemon grass (or eqiv dried, I used 1 tblsp dried and chopped)
4 allspice berries
20g chopped cinchona bark
130g sugar
pinch salt

Mix everything together and put in to the fridge for 3 days. Stir at least once a day.
Strain the liquid off and store in the fridge.


To use, mix 1 measure tonic syrup and 1.5 measures gin and top up with sparkling water (maybe 5 measures).
Not quite the colour of 'normal' tonic but definitely tasted like it, but much nicer. Going to make this again.
