Chinese New Year and meal out

I went out with some colleagues because someone was over from the China office and it was Chinese New Year.
We went to this place http://www.mailinda-millwall.co.uk, it was very popular with Chinese people - always a good sign.
The menu was amazing with for example Fried Morning Glory and Ducks blood with beef and gizzard. We had a hotpot which had spicy stock one side and not spicy the other and came with loads of different meats and fish to cook in the boiling stock as well as several different mushrooms, spinach, tofu and seaweed. We also had a number of precooked dishes, a delicious spicy beef and a spicy chicken as well as mutton chops and pork kebab.
Far far too much to eat. But delicious! So much for the diet!

Not sure what was keeping it so hot, charcol maybe or a gas flame?

What is this? Tripe I think, although I have never seen it so frilly.
