Apricot Spirit Recipe

You will notice that all these spirit drinks (eg Plum Rum, Plum Gin etc are very similar. Limoncello is essentially the same but uses a sugar syrup because that is the traditional recipe rather than just adding the sugar - not sure what if any difference this makes to the taste)

Half fill a jar with Apricots (I half them but add the stone too)
Weigh and add the same weight of sugar
Fill up with booze of your choice, we used fruit spririt, not sure what it is made from but it is relatively flavourless spirit you get a lot in France for this kind of purpose - vodka would be very similar)
Store for a few months then strain in to a bottle (you can eat the apricots now)
