Potato Waffle Recipe

2 tsp butter
1 onion finely chopped
1tsp chopped garlic (optional)
360g mashed potato
30g plain flour
2 eggs
1/2 tsp salt
1/4 tsp pepper
Fry the onions and garlic gently until soft, then mix everything together and cool as per instructions on the waffle maker.
Makes 6

Waffle Recipe

New waffle maker! Exciting!

280g plain flour
2 tsp baking powder
50g sugar
1 tsp salt
425ml milk
1 tsp vanilla extract (optional)
3 large eggs
125g melted butter

Mix together dry ingredients
Mix together wet ingredients (except butter)
Add wet ingredients and butter to the dry ingredients.
Leave to rest for a few minutes.
Cook as per instructions on your waffle maker.
Makes 12 waffles



This is an alternative recipe to try sometime
240g flour
100g melted butter
1 tbsp baking powder
1/2 tsp salt
500ml water

Mix everything except the butter, then mix in the butter and rest for 15mins or so.

2 tblsp sugar
4 tsp baking powder
1 tsp salt
2 eggs
350ml warm milk
75g melted butter
1 tsp vanilla essence (optional)

Mix together dry ingredients
Mix together wet ingredients
Add wet to dry and mix in to a batter. Don't over mix as it results in a tough waffle. It is fine if there are a few butter lumps.

Pain de Sucre from the top of Quatre Terms

Beautiful views on this walk up and ski down. Yet again enjoying the fabulous weather. It is the school holidays so the ski area is chock full of nutters, hencely great to get away from the crowds.

Easy to get a bit blasé about these views!

Cutting trees in the potager and elsewhere

The potager has been getting more and more overshadowed by trees for some years. As we are about to put in some new beds (the wood we did 5 years ago is rotting now) we thought we had better take advantage of the lovely weather to get it done. It started as one tree we were going to cut and a few hazels and ended up as far more.


Hard to get a photo of the scale of the devastation. We left that silver birch and another smaller one. That was it.

Lots and lots of branches to be burnt and relatively little firewood. This is the way of all trees!

While we were at it we gave the plum tree at the top of the drive a drastic trim. Again many branches few logs

This is the potager with the mess cleared up. Now we can get on and do the new beds. This weeded one is going to be the first so that peas and beans can go in asap. We are also going to add a fruit cage at the other end over the raspberries, black currents, blueberries and gooseberry.

Wind storm

Really suddenly from nowhere a giant gust of wind struck...
The weather before hand was pretty nice. It stayed windy but not so bad for the rest of the day.

This tent was in the potager - it has been there for years just fine

This tent was keeping building materials dry at the end of the house. We had to take the canvas off as it was attempting to bowl back in to the house. Bits of this are going to get repurposed in to part of a fruit cage.

This apple tree has been dead for some time but we left it be, partly as birds nest in the ivy and partly because we were worried if we cut it down it would land on one of the trees we planted a few years ago.

It did land on this poor little plum tree. It has had a bit of a hard life as the bracken and weeds mean it has taken a long time to get established. It was finally looking quite healthy and like it might actually manage to have some plums. Not this year I guess!

The bedroom door was also blown in. Fortunately Doug was in there to close it before further damage. The bedroom was full of leaves and seeds though.

Happy Pancake Day!


Family recipe:

225g plain flour
2 eggs
enough milk to get a thick cream consistency

Medium temperature pan.
With a ladle put enough of the mixture in to the center of the pan and swirl till it reaches the edges.
'Enough' is the amount needed to cover the pan with a thin layer all over

More eggs

I recently complained about not getting any eggs. We got six today. Hurrah! Some are from the new chickens starting to lay and some are from the old ones coming back in to lay after moulting. Perhaps the ducks turning up motivated the chickens to up their game!
