Soft Rolls Recipe

These are like brioche but not sweet.
You can also cook as a loaf. Makes nice soft bread for the sandwich maker.

Approx 210g milk
110g butter
20g sugar
500g plain flour
2 tsp instant bread yeast
2 eggs
1 tsp salt

Weigh the eggs (without the shell). You then need the amount of milk to make up the weight to 320g (eg the eggs weigh 110g, you need 210g milk)
Warm milk and butter (you want the butter to melt and the temperature to be something that won’t kill the yeast ie you can out your finger in it without pain, but it feels warm)
Put everything into stand mixer bowl and stir until combined
Rest for 5 mins
Kneed for 10 mins
Cover the bowl and leave to rise for approx 30 mins or until doubled in size.
Divide in to approx 14 rolls and shape them then put on baking tray and cover to double in size again (approx 30 mins).
Bake at 180°C for approx 15 mins until well browned.
Brush the top with butter if you want a shiny top...
