Plum Gin Recipe

We don't have sloes here so we have had to make something different. We have put on some Plum Rum but decided we needed gin too. The plums we have are tiny and getting the stone out for other recipes is very time consuming and starts to wear thin after a while. They can go in whole to these drinks so we finished up the remaining ones with this recipe. It is essentially the same as the Rum and you could try with any other strong spirit you fancy.

Half fill a jar with Plums (prepare them by pricking or scoring a line round them)
Weigh and add the same weight of sugar
Top the jar up with gin (>40% is best)
Leave for a few months (should be ready for Christmas) and strain in to a bottle.

The plums will look anemic and weird because the colour has leached in to the spirit, but they should still be quite tasty. Maybe with icecream.
